Wind Farm - New 2010
Maple Syrup Harvest

· Green Wind Farm has 3,500 taps. They make 600 to 1,000 gallons
of maple syrup each year. They use both horses and pipeline to gather
their sap.
· This year's syrup is all Grade A Dark amber. It is Vermont
Organic Farmers (VOF) Certified.
· The syrup has the same density (sweetness) and quality as all
other grades. Grade "A" Dark Amber maple syrup is distinct in its maple
flavor and color.
· All syrup has been "hot packed". This means that the syrup can
be stored at room temperature until the container is opened. Then we
recommend that the syrup, if in cans, be transferred to a glass
container and then be refridgerated.
· You might see some precipitate settling in the bottom of the
glass jars. This is naturally occuring minerals (niter) that are drawn
out of the syrup by the heatring of the syrup during the packing
process. Felt and rayon filters are used on our maple syrup. Other
filtering systems use a filter aid to remove the niter.
· Did you know that pure maple syrup is good for the heart?!
Maple syrup is high in the minerals manganese and zinc.

(company name Suro), who own and work an organic Elderberry
Farm, have given Hallelujah Hive the honor of carrying their
organic elderberry jams and jellies. They grow their
chemical-free elderberries about a mile north of Vermont, in
Southern Canada. We are the first in the entire USA to offer
